Here’s a delicious and nutritious breakfast. Banana oatmeal with fresh berries! This has become my new favorite go-to breakfast. ⁣
⁣
𝘈𝘳𝘦 𝘺𝘰𝘶 𝘢 𝘴𝘸𝘦𝘦𝘵𝘴 𝘪𝘯 𝘵𝘩𝘦 𝘮𝘰𝘳𝘯𝘪𝘯𝘨 𝘱𝘦𝘳𝘴𝘰𝘯? I am for sure. I find that adding the banana in the mix instead of as a topping, you really don’t need to add additional sweeteners to your oatmeal. Although, I did sprinkle some vanilla coconut sugar on top just for fun, for the gram! 🙂 ⁣
⁣
𝗛𝗲𝗿𝗲’𝘀 𝘄𝗵𝗮𝘁 𝘆𝗼𝘂 𝗱𝗼: ⁣
⁣
* Mash a banana with a fork. ⁣
* Add approximately 1/2 to 3/4 cup of almond milk or other plant milk. ⁣
* Mix to combine. ⁣
* Add spices if you want. I added a dash or two of cinnamon. ⁣
* Stir in 1/2 cup old-fashioned rolled oats. ⁣
* Cook on the stove top or microwave 1 1/2 to 2 minutes. Stop and stir half way through. ⁣
⁣
𝘕𝘰𝘵𝘦: I added a tablespoon of @so_delicious coconut creamer too for some extra creamy goodness. ⁣
⁣
𝘛𝘰𝘱𝘱𝘪𝘯𝘨𝘴 & 𝘔𝘪𝘹-𝘐𝘯𝘴 ⁣
Top with peanut butter or other seed or nut butter drizzle if you like.

Chickpeas or garbanzo beans are such a versatile vegan food. They can take on so many different textures. This is my favorite go-to lunch! ⁣

𝗖𝗵𝗶𝗰𝗸𝗽𝗲𝗮 𝗦𝗮𝗹𝗮𝗱 𝘁𝗵𝗮𝘁 𝗦𝗮𝘃𝗲𝘀 𝗖𝗵𝗶𝗰𝗸𝗲𝗻𝘀 ⁣
⁣
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁s:⁣
⁣
𝗕𝗮𝘀𝗶𝗰⁣
* 1 15-oz can chickpeas/garbanzo beans ⁣
* 3 tablespoons fresh squeezed lemon juice (𝘫𝘶𝘪𝘤𝘦 𝘧𝘳𝘰𝘮 𝘢𝘣𝘰𝘶𝘵 𝟷 𝘭𝘢𝘳𝘨𝘦 𝘰𝘳 𝟸 𝘴𝘮𝘢𝘭𝘭 𝘭𝘦𝘮𝘰𝘯𝘴) ⁣
* 2 tablespoons vegan mayo (𝘺𝘰𝘶 𝘤𝘢𝘯 𝘳𝘦𝘥𝘶𝘤𝘦 𝘵𝘰 𝟷 𝘵𝘢𝘣𝘭𝘦𝘴𝘱𝘰𝘰𝘯 𝘵𝘰 𝘬𝘦𝘦𝘱 𝘪𝘵 𝘭𝘪𝘨𝘩𝘵𝘦𝘳 𝘰𝘳 𝘴𝘶𝘣 𝘸𝘪𝘵𝘩 𝘵𝘢𝘩𝘪𝘯𝘪) ⁣
* 1 tablespoon nutritional yeast aka nooch⁣
𝗠𝗶𝘅-𝗜𝗻𝘀 ⁣
* ½ cup carrots, shredded (𝘢𝘱𝘱𝘳𝘰𝘹. 𝟸 𝘳𝘦𝘨𝘶𝘭𝘢𝘳 𝘴𝘪𝘻𝘦 𝘤𝘢𝘳𝘳𝘰𝘵𝘴)⁣
* ½ cup celery, finely chopped (𝘢𝘱𝘱𝘳𝘰𝘹. 𝟷 𝘭𝘢𝘳𝘨𝘦 𝘰𝘳 𝟸 𝘢𝘷𝘦𝘳𝘢𝘨𝘦 𝘴𝘪𝘻𝘦 𝘴𝘵𝘢𝘭𝘬𝘴)⁣
* 1 small apple or 1/2 large apple, chopped⁣
* 2 tablespoons chives, finely chopped⁣
* 1 tablespoons relish⁣
* 2 teaspoons dry dill⁣
* ¼ - ½ t sea salt (𝘰𝘳 𝘵𝘰 𝘵𝘢𝘴𝘵𝘦, 𝘰𝘱𝘵𝘪𝘰𝘯𝘢𝘭) ⁣
⁣
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀:⁣
⁣
1. Mash chickpeas in a bowl with a potato masher until there are no whole chickpeas. (a 𝘱𝘰𝘵𝘢𝘵𝘰 𝘮𝘢𝘴𝘩𝘦𝘳 𝘸𝘰𝘳𝘬𝘴 𝘣𝘦𝘴𝘵 𝘣𝘶𝘵 𝘪𝘧 𝘺𝘰𝘶 𝘥𝘰𝘯’𝘵 𝘩𝘢𝘷𝘦, 𝘺𝘰𝘶 𝘤𝘢𝘯 𝘶𝘴𝘦 𝘢 𝘧𝘰𝘳𝘬.)⁣
2. Mix in the lemon juice, mayo or tahini, and nutritional yeast aka nooch.⁣
3. Chop the celery, shred the carrots, chop the chives and add to the mashed chickpea mixture.⁣
4. Add remaining ingredients and mix together.⁣
⁣
𝗢𝗽𝘁𝗶𝗼𝗻𝘀 𝗳𝗼𝗿 𝘀𝗲𝗿𝘃𝗶𝗻𝗴: ⁣
⁣
- Serve with sliced green apple and sliced carrots. ⁣
- Make a closed or open-faced sandwich. I like toasted @foodforlifebaking Ezekiel bread with sliced tomatoes.⁣
- Make romaine lettuce boats. Just scoop some chickpea salad onto a romaine lettuce leaf - so good and refreshing.⁣
- Serve with corn chips as a “dip.”⁣
- Serve on rice cakes⁣

NOTE: I was being lazy AF today so added just chopped apples, red pepper, and dry dill. It was still delicious! ⁣

🌱 Here’s a deliciously different way to eat oats for breakfast. 🌱⁣

𝗕𝗮𝗻𝗮𝗻𝗮 𝗢𝗮𝘁 𝗕𝗿𝗲𝗮𝗸𝗳𝗮𝘀𝘁 𝗠𝘂𝗴 𝗖𝗼𝗼𝗸𝗶𝗲/𝗖𝗮𝗸𝗲 ⁣
⁣
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:⁣
* 1 banana 🍌 ⁣
* 1/2 c oats (I use @bobsredmill )⁣
* 1 1/2 teaspoons chia seeds⁣
* 1 tablespoon peanut butter powder (@traderjoes ) ⁣
* 1 teaspoon maca powder⁣
* spices - cinnamon, nutmeg, pumpkin spice⁣
Toppings:⁣
* teaspoon tahini drizzle (I use @seedandmill )⁣
* teaspoon maple syrup drizzle⁣
⁣
𝘐𝘯𝘴𝘵𝘳𝘶𝘤𝘵𝘪𝘰𝘯𝘴:⁣
1. mash banana⁣
2. add oats, chia seeds, peanut butter powder, maca powder, and spices (amounts to your liking - cinnamon, nutmeg, pumpkin spice)⁣
3. prepare the bottom of a microwave-safe bowl with parchment paper⁣
4. microwave 1 1/2 to 2 minutes⁣
5. once it cools for a minute or two, take a non-serrated knife, like a butter knife, and run it around the edges of the bowl to loosen the cookie/cake⁣
6. flip it over onto a plate and add your toppings⁣

Served with 2 oranges 🍊 and decaf rooibos chai tea (@numiorganictea )☕️ ⁣
